Glama-Ma’s Hearty Homemade Minestrone Soup
This hearty Minestrone Soup is ready in about 20 minutes including chopping time and is a light but filling soup ideal for a work lunch if prepped ahead or a lighter evening meal.
It is very easy to make a batch of this and freeze in portions for an easier life. You can freeze in tubs and then transfer from the tubs to a holding bag whilst in the freezer to free up your tubs.
At 270 calories it’s still enough to be classed as a meal. Don’t forget to reduce the calories appropriately if you omit the pasta!
Whilst Minestrone Soup is essentially a Vegan dish please check the ingredients in the tomato puree, vegetable stock, pasta and butter beans that you buy to be certain. For Gluten free omit the pasta or use a gluten free pasta and also check the tomato puree, stock and butter beans ingredients lists. These should all be gluten free but not all manufacturers are the same.
Ingredients
1 tsp Coconut oil
½ white onion
½ garlic clove crushed
¼ carrot
¼ parsnip
2 green beans
50g/2oz tin butter beans, drained
½ tsp oregano
1tsp tomato puree
250ml/1 cup low salt vegetable stock
25g/1oz spaghetti
salt & pepper to taste
Method
Wash all the ingredients and top and tail. I prefer to leave the skins on but you can peel if you prefer to.
Peel and dice the onion, carrot, parsnip, garlic & green beans.
Saute the veg in the coconut oil for a few minutes.
Break up the spaghetti & cook as per packet instructions.
Add all the remaining ingredients to the sauteed vegetables, cover and simmer until the vegetables are tender.
Blend using a hand stick or food processor. I prefer to just blend a little as I still like this minestrone to be a chunky soup
If using a sealed unit like an upside down blender it is essential to allow the soup to cool before blending. It is ok to reheat the soup after blending.
If you don’t have a blender then a good potato masher will do what needs to be done to mash the veg to provide a source of thickening from the butter beans.
